For the past couple months, my day off ritual has been making keto waffles. They are SO yummy and perfectly keto! Below is the recipe that I’ve been tweaking and finally settled on. Give it a try! It’s just as good, if not better, than regular waffles!
Ingredients:
2 eggs
2 oz cream cheese
2 tbs almond flour
2 tbs coconut flour
1 tsp vanilla extract
1 tsp baking powder
*optional – I added 1 tbs of flaxseed meal and 1 tbs mct oil for an extra healthy kick.
The rest is pretty simple. Just throw it all into a blender or food processor until thoroughly combined. You can adjust the amount of flour depending on your preference for the thickness of the batter.
Then just let your waffle maker do its magic! I topped mine with Kerrigold butter, Honest syrup, and blackberries.
Macros for the waffle (not including berries, butter, and syrup) come to 4g net carbs, 19g fat, 16g protein.
6 blackberries have 1g net carb, Honest Syrup has 2g net carb per tbs (I used 2 tbs), and of course the butter has no carbs. I figure for a day off breakfast splurge, using half of my allotted carbs for this delicious treat is well worth it!
